Apple & Shaved Brussel Sprout Salad

The perfect quick and easy fall inspired salad! Using fresh seasonal vegetables, this salad is the best light and fresh lunch or dinner. Customize with your favorite toppings or add vegan protein life tofu or tempeh to make this salad a hearty option!

Apple & Brussel Sprout Salad

  • 12-14 Brussel Sprouts shaved thin
  • 2 cups of tuscan kale
  • 1 sliced red apple
  • 1 large peeled and diced carrot
  • 1/4 sliced red onion
  • 1/2 cup chopped pecans

Apple Cider Vinaigrette

  • 2 tbsp apple cider vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tbsp maple syrup
  • 1 tbsp dijon mustard
  • 1/4 tsp garlic powder
  • Salt and pepper

Serving Suggestion:

Serve topped with your favorite vegan protein, like crispy tofu or tempeh!

How To:

  1. Start by preparing all of your vegetables, using a mandolin or knife, shave your brussel sprouts thin and cut your tuscan kale into strips. Then, slice your apple thin, dice your carrot, thinly slice red onion and chop pecans.
  2. Once all vegetables are prepared, make your apple cider dressing by combining apple cider vinegar, extra virgin olive oil, maple syrup, dijon mustard, garlic powder, salt and pepper into a small mixing bowl. Whisk until fully combined.
  3. Divide your vegetables evenly amongst two bowls starting with kale, then brussel sprouts, apple, carrot, red onion and top with pecans.
  4. Drizzle apple cider dressing on top of each salad, serve and enjoy!
