Spicy Vegan Mac & Cheese

The easiest healthy, cashew based spicy vegan and Mac and cheese! Comes together in less than 15 minutes, using simple, plant based ingredients!

  • 1 box of gluten free pasta
  • 1 container of Nuttin Ordinary Spicy Cashew Cheese
  • 1 1/2 cups of plain unsweetened non-dairy milk
  • 1/2 cup raw soaked cashews
  • 2 tbsp nutritional yeast
  • 1/4-1/2 tsp chili powder
  • Top with chipotle hot sauce

Serving Suggestion:

Serve hot topped with chipotle hot sauce and extra chili powder!

How To:

  1. Start by boiling a medium sized pot of salted water. Cook gluten free pasta according to package instructions.
  2. While pasta is boiling, add your spicy cashew cheese, nondairy milk, raw soaked cashews, nutritional yeast and chili powder to a high speed blender.
  3. Blend until smooth and creamy. Taste and adjust seasoning, adding more nutritional yeast if you want a cheesier flavor and more chili powder if you want it spicier.
  4. Once pasta is done boiling, remove from heat and drain.
  5. To the same pot you used to boil the pasta, add your vegan spicy cheese sauce and put on low-medium heat.
  6. Stirring constantly, heat the cheese sauce until hot. Add pasta and stir until pasta is fully coated. Continue to cook until the pasta is warm.
  7. Remove from heat and divide into bowls. Serve warm topped with chipotle hot sauce (optional) and extra chili powder if needed!
